"I've always had a love for cooking and while in college I got paid for doing it." Several years ago Doreen cooked a pot of Jambalaya to be served at intermission during one of the band’s concert and the audience went wild! Doreen's Jazz now offers "Dinner & Music", a full circle New Orleans experience. Not only does the audience receive a great Doreen's Jazz signature concert but they also are treated to one of many classical New Orleans entrees from the familiar, i.e. Jambalaya, Dirty Rice, Red Beans w/rice and Gumbo, to the unexpected, like Creole Stew and Braised Rabbit. They'll also enjoy a very New Orleans dessert, i.e. Banana's Foster and Bread Pudding. These meals are not just thrown together, either. They are full of the love and experience that Doreen has learned through working living and eating food. These experiences are gathered from her famous “Treme” neighborhood to her hometown of New Orleans to counties and cities around the world.

Cliick for larger imageThere are several versions of  "Dinner and Music". One is casual with disposable plates and cutlery. The other is a fine dining experience including great music by Doreen’s Jazz, a four course sit down meal and table service. The "Dinner and Music" concerts require a nearby functional kitchen and dishwashing facilities on the premises. It also requires a staff of at least five.

 

Some signature dishes to choose from are as follows:

Appetizers

Spinach & Artichoke puffs, Crab Cakes

Soups

Crab Bisque, Gumbo, Yakamein, Shrimp and Corn, Turtle Soup and Creole Vegetable.

Main dishes

Crawfish étouffée, Blackened Fish, Stewed Mirliton w/Shrimp and Ham, Jambalaya, Creole Smothered Pork, Beef, Lamb, etc.,
Red Beans w/rice, Green Beans w/potatoes and Ham seasoning, Smothered Okra in Sauce Piquante,
Stuffed Bell Peppers, Creole Glazed Ham, Smothered Cabbage, Shrimp Creole and many others.

Desserts

Bread Pudding, Bananas Foster, Beignets, Creamy Creole Pralines, T- Cakes, King Cakes, Queen Cakes, Banana Pudding,
Peach or Blackberry Cobbler and Pecan, Apple or Sweet Potato Pie.

Corn and Crab Bisque

Mixed Greens with roasted peppers, spiced pecans,
and goat cheese with Creole mustard vinaigrette

Stuffed Chicken Creole
